The Estate

Domaine Charles Hugot Vineyard in Beine, Chablis Sun

At 42, with twenty years of experience as estate manager of a certified organic domain, I took over the family vineyard founded by my father in the late 1970s. This new chapter allowed me to return to essentials: artisanal work, precise and entirely focused on terroir expression.

Terroir and parcels of Domaine Charles Hugot

On 4 hectares, I vinify each parcel separately to reveal without compromise the nuances of my different terroirs: Bourgogne, Chablis, Petit Chablis, Premier Cru.

This deliberate choice of micro-vinification allows me to express a distinct identity, where each lieu-dit tells its own story.

Grape pomace, Charles Hugot Beine, Chablis

Guided by a strong sensitivity to living systems, I work in certified organic agriculture on the estate parcels that are suited for it.

In the cellar, I adopt a minimally interventionist approach: indigenous yeasts, long aging on fine lees, no artifice, only the pursuit of purity and precision that respect the grape's origin.

The 2024 vintage marks an important milestone with the production of my first certified organic cuvée: "La Forêt", from a 1.06-hectare parcel planted with vines over 50 years old.

This cuvée fully embodies my philosophy: authenticity, finesse, and sincere expression of the terroir.

Each wine to come will follow the same guiding thread: one parcel, one identity, one cuvée.

Our Wines

La Chapelle Bottle

Chablis "La Chapelle" - 2025

The Voice of the Mid-Slope

"La Chapelle" takes its name from a small chapel that once watched over these vines. This lieu-dit occupies the mid-slope, that intermediate zone where the vine finds its perfect balance: high enough for drainage, low enough for soil richness. It's the archetypal Chablis: straight, fresh, mineral, uncompromising. A wine that tells where it comes from with crystal clarity.

La forêt Bottle

"La Forêt" - Organic Chablis 2024

The Foundation

From a 1.06-hectare plot planted with vines over 50 years old, "La Forêt" is my first certified organic cuvée. Its name evokes the wooded edge bordering the vineyard, this living ecosystem in dialogue with the soil. On this Kimmeridgian terroir, Chardonnay plunges its roots into a marine memory 150 million years old. Oyster fossils emerge, scratch the limestone, infusing the wine with that mouth-watering salinity.

Beauroy Bottle

Chablis Premier Cru "Beauroy" - 2025

The Elegance of the Great Slope

Beauroy stands on the left bank of the Serein, southeast exposure, gentle slope that catches the rising sun. This historic Chablis Premier Cru draws its elegance from this perfect geometry: the right inclination, natural drainage, Kimmeridgian outcropping everywhere. Here, Chardonnay achieves a precision found only at the top of the slope. Each parcel of Beauroy tells a subtle variation, and mine expresses this tension between power and finesse.

Upcoming Wines

Vigne de Bleigny Bottle

Bourgogne Rouge "Vigne de Bleigny" - 2025

Pinot Noir in Auxerre Territory

Bleigny, a neighboring hamlet of Beine, shelters a few Pinot Noir parcels planted on clay-limestone soils that give the grape its full expression: bright fruit, silky texture, fresh finish. In the Grand Auxerrois, Pinot Noir regains an elegance sometimes lost elsewhere. Here, no excessive concentration: just the truth of the fruit and the honesty of the terroir.

La Pidence Bottle

Bourgogne Blanc "La Pidence" - 2026

Chardonnay Beyond the Walls

"La Pidence" ventures outside the Chablis appellation area to explore other expressions of Chardonnay on Beine's lands. Here, the soil changes slightly, limestone dialogues with other clays, and Chardonnay seizes the opportunity to tell another story. This is a Bourgogne that has nothing to envy from more prestigious appellations: it simply bears a different name.

Derrière les murs Bottle

Petit Chablis "Derrière les murs" - 2026

The Pure Expression of the Heights

"Derrière les Murs" occupies the hilltop, where dry stone walls have shaped the landscape for centuries. These upper slopes, often underestimated, produce wines of crystalline freshness, electric tension. Petit Chablis is not a "small" wine: it's simply Chardonnay speaking with the accent of the heights—more aerial, more nervous, more direct.
